Sunday Brunch Skillet




There is nothing I have grown to appreciate more in my life than the beauty of a Sunday.Β There are no alarms going off, no urgency to spring out of bed, I can roll over give my man a big ole’ kiss and get excited to spend the whole day with him and my cats. I get so much done that I need to on Sundays, cleaning around the house, planning for next weeks meals, go to the store and get all my errands done. It’s the most productive lazy day and it’s what I look forward to constantly. Although we use this day to buckle down on what the coming weeks hold and to catch ourselves up on everything we always make a point to enjoy Sunday brunch.

There is nothing in the world better than Sunday brunch! It’s always so fun and we like to try new things and styles of putting stuff together. We put on some music, pour ourselves some mimosas and take our culinary skills on an adventure!

This past weekend we made this brunch skillet with potatoes, poblano, spicy red peppers, onions, bacon and eggs. We topped it with some tomatoes avocado and cilantro and went to town! It was just perfect. We were able to enjoy the nice weather and eat out on our balcony. My cats layed out and enjoyed the sun, we sipped our coffee and joked of one day owning a restaurant named Skillets. We probably will change the name but, I can guarantee you we will have a pretty kick ass Sunday brunch menu!

Sunday Brunch Skillet
  1. Place your bacon in your skillet and cook until crispy. Remove bacon from skillet and place on some paper towels to help drain some of the grease off.
  2. Cut your potatoes into bite size cubes and add to your skillet with the remaining bacon grease and a pinch of salt and pepper. These will take a while to cook down, if you would like you can microwave them for a bit to get the center nice and hot and then add them to the skillet to brown. This helps give them that crispy outside and soft inside.
  3. As you wait for your potatoes to start to crisp up, cut your peppers and onions. Add them to your skillet.
  4. You might have to fry your eggs in a different pan unless you're an expert and cooking in one. I am not so I fried mine in another skillet.
  5. Crumble up bacon on top of your hash mixture.
  6. Place eggs on top of your now bacon hash mixture.
  7. Dice some tomato and slice some avocado to top the eggs and throw on some cilantro.
  8. Take some plates and silverware outside and enjoy!

In all honesty you could make this in any ole’ skillet but nothing beats a nice cast iron! if you don’t have one I highly recommend you invest it one. It will not let you down and it will easily become your favorite tool in the kitchen!
