Salmon on Cauliflower Rice w/ Mango Salsa 

 


 

This morning I woke up to start my normal routine. Force myself out of bed, empty my bladder and step on the scale. The past few days I have stayed at the same weight and I thought I was starting to lose hope. But much to my surprise, when I stepped on the scale and the blue screen lit up, I was no longer stuck at 187! My body filled with joy! I looked down at 185 right above my toes and felt immediate victory! Not just because I pushed through my somewhat plateau, but I had reached the 20 pound mark. TWENTY POUNDS! AHH I could just scream with excitement!

I started the year weighting an embarrassing number of 205. Gosh it’s just horrible thinking about it. But in just a few short months I have eaten my way down 20 freaking pounds!!!!. Literally eaten my way…

Now there were times when I may have fallen off course and had a beignet or 3… but my efforts are truly paying off. All the meal planning and grocery list making has truly helped my wallet and waistline. I’m so proud of my progress and I can’t wait to keep going and start incorporating exercise to my daily routine. THAT’S RIGHT! I havent even been exercising. Can you imagine how amazing my results will be when I start… me too I can’t wait.

My overall goal for weight loss is to be around 140-145. Which is a huge challenge. Even at my thinnest a few years ago I was 150, but felt I could lose a few more pounds if I toned up and stayed focus on my goals.

This journey is what makes me want to keep sharing these recipes with you guys. First off all they are DELICIOUS, and also they are very healthy and good for you.

With that being said here is a super easy salmon recipe that might turn into a weekly thing in your household.

Instructions
Salmon
  1. Preheat Oven to 400°F and line a baking sheet with foil.
  2. Rub your filets with oils and season with paprika, salt and pepper.
  3. Bake for 10-12 minutes.
Cauliflower Rice
  1. Chop up your Cauliflower and try to cut down the stems as much as possible.
  2. Blend Cauliflower in a food processor until it starts to look like grains of rice. You want to be careful not to over blend, because you'll turn out having... something that isn't rice, maybe a quinoa.
  3. Put your now "rice" into a pan and start to cook down. You can add some oil and salt and pepper to taste.
Mango Salsa
  1. Dice your mango, tomato, and onion and add to a bowl. Chop your cilantro and add to the same bowl. Squeeze lime on top of salsa and give a good mix.
  2. Plate your meal by building a bed of rice, top with salmon and garnish with salsa. ENJOY!

This is a super simple quick dinner to make. Its light on the tummy but packed with amazing flavor. You can make it fancy, you can make it casual, you can make it for a party, you can make it for yourself. What ever the circumstance, it’s going to amazing.
