Kimchi Cauliflower Rice



We have been so busy. Well.. maybe its just we have a lot going on and it doesn’t seem like I have a moment to sit down and get the things I need done, done. This has put me so behind on everything and I’m trying to get back on my feet. Between working two shifts a day delivering, trying to put together things for some sewing classes I’m going to start teaching next month, trying to get typical errands and house work done, work on a skirt for a client, and making it out to Lafayette on the weekend to work on a house we will be moving into the beginning of October, I feel like I have no time. However I know what needs to be done to fix this, I just need to put those things into motion. If I could just wake up early everyday I would have so much more time to get things done and hopefully eventually incorporate a workout routine. I just need to become a morning person!

Enough about the hole I have dug myself into…

Todays recipe has made its way into my top 5 most delicious recipes we have made so far. Kimchi Cauliflower Rice!!!!!!!! Oh my goodness is it good. I never knew about kimchi until about a year and a half ago. My friend Livi and I went out to some bars in Houston and on our way back to the car that night we cam across this food truck. Drunkenly and unaware, we ordered the fries option the had available. We each took a bite and were immediately in AWE. Our mouths were stunned by this amazing flavor we couldn’t describe. It was new and different, kinda sour kinda spicy. We down the rest in a matter of moments. We went back to the food truck to see what it was, and sure enough, it was Kimchi.

For a while I didn’t even know what kimchi was. I though it was a spice, or a salt type of thing. I just new whatever it was, it was amazing! I eventually looked it up and realized I was very, veryΒ mistaken.

So what is Kimchi?

Kimchi is a fermented Korean Side dish. It’s typically made with cabbage as the main ingredient. Its combined with other vegetables and seasonings and left in a jar to undergo the fermentation process. And it’s really good for you and growing as a super food!

Kimchi Cauliflower Rice

Instructions
  1. Cut up your pepper, onion, and broccoli. Put them into a skillet over medium heat with some olive oil and let cook down.
  2. Cut your cauliflower into pieces, you don't want a bunch of the stalk, and throw into a food processor.
  3. You want to give the cauliflower a quick blend. You want it to look like a rice, but be careful not to over process.
  4. Chop up your kimchi into how you prefer. I like it to be smaller pieces, but if you would prefer bigger pieces I don't see why that would be a problem. Add to your skillet.
  5. When your vegetables are cooked down a bit add in your cauliflower rice.
  6. In a separate pan, scramble your eggs. Then add to your rice mixture.
  7. Add your liquid aminos, and kimchi juice into the skillet along with a pinch of salt and pepper. Let flavors combine, be sure not to over cook your rice!
  8. Add to a bowl and garnish with some parsley and enjoy!

This recipe has shown me the beauty of cauliflower rice! Before starting my Paleo journey I was a huge fan of rice. Any kind of rice I loved! I now have a way to get my rice fix and gaining all the benefits of being gluten and grain free.

I really hope you try this recipe out because it truly has become one of my favorite dishes. You could easily add some chicken or shrimp to the top for some protein.

  • Haley. I wish we could promise you that age will give you more available time – but even my Mom when she was close to her 100th birthday said her days use to fly by.
