You know that post lunch sluggish feeling?

 

That one after you eat something super heavy and you start slipping into a minor food coma. It always leaves you in mid day funk and you find yourself having to grab another cup of coffee just to get your work momentum back. But then it takes another 30 minutes for the food to digest and a couple more for the coffee to kick in. In the mean time you are scrolling through pinterest planning out a 6-year-old birthday party for your niece who isn’t even 1 yet all because you saw a rainbow unicorn cake and it got you thinking…

 

You glance over to the clock just to realize and hour and a half went by, you haven’t got anything done, and the work day is coming to an end.

 

Yeah… That’s the worst!

Because I’ve crafted up a super simple light and refreshing salad you can make ahead of time that won’t leave you with that mid-day haze. It goes PERFECTLY with my Dairy Free Creamy Dill Dressing

Instructions
  1. Use a mandolin slicer to slice cucumber and tomatoes.
  2. Half your onion and slice into thin slices.
  3. Combine all ingredients into a bowl and mix.
  4. Enjoy!
