Broccoli Salad with Curry Dressing

One of my favorite things about eating paleo is that I am able to try so many new things. I was always a semi picky eater growing up. I never ate seafood, I always ordered my steak well done, and I was extremely hesitant to try food from other cultures if it wasn’t super americanized. So stupid and closed-minded of me.

After starting paleo, I have relaxed on my nonsense eating ways. I am actually excited to try new fruits or vegetables, new styles and flavors to add, and started ordering my steak medium well, instead of well done. HAHA! It’s all about the baby steps.

In the past few months I have realized how amazing Indian and Mediterranean food is! It is actually pretty paleo friendly. If me and my boyfriend eat out, 9 times out of 10 it’s at an Indian or Mediterranean buffet. We can pick what we want, however much of it we want, and we don’t have to ruin anyones day with a pain in the ass order. We love it!

Honestly I don’t think I had ever tried curry ever before in my life, maybe once, but maybe not. It was always a food people talked about. I guess the jokes of running to the bathroom got to me and I was like eh, no thanks. Little did I know it is literally not like that at all. You can buy all different types of curry powder, depending on how spicy or sweet you want it.

So if you’re new to trying curry, you just really like broccoli, or you’re just hungry I suggest you try this one out. This salad is delicious! Full of a bunch of things you probably wouldn’t pair together but it’s AMAZING! It’s super light, flavorful and refreshing. Of course dairy free and gluten-free. You can easily make this meal vegan by removing the bacon.

Broccoli Salad
Prep Time 40 Minutes

Broccoli Salad
Instructions
Cashew Curry Dressing
  1. Soak 3/4 cup of cashews in a covered bowl of water for 8 hours. (We let them soak overnight in the fridge)
  2. Combine all ingredients into a food processor and blend until smooth and creamy. You may need to scrape the sides down mid blend.
Broccoli Salad
  1. (Optional, if you don't like raw broccoli) Stem Broccoli.
  2. Let Broccoli cool completely.
  3. Cook Bacon.
  4. In a bowl combine Broccoli, Cilantro, Purple Onion, Bacon, and Cranberries.
  5. Set bowl in fridge for an hour to chill.
  6. Take bowl out of fridge, add cashews and sunflower seeds.
  7. Pour in Cashew Curry Dressing and toss.
  8. Enjoy!
